• Taking fully responsibility of the position.
• Be acknowledge of all the P&P and regulations.
• Ensure proper coordination with kitchen and bar on daily or monthly specials and promotions: possesses sound knowledge of food & beverage, up selling and availability of menu items.
• Performs duties common to all managers and other duties as may be assigned.
2. ADMINISTRATIVE RESPONSIBILITIES
• Plans work assignments based on room occupancy forecast, Event orders group meal arrangements and VIP list. Adjust schedules to meet emergencies, coordinates with other managers regarding emergency staffing.
• Maintains proper records of Sales, guest complaints, solutions and all concerns pertaining to personnel or equipment in appropriate logbooks for reference.
• Maintains established par stock for operating supplies to ensure smooth operation.
• Make frequent suggestions to Management in reference to improvement of general operation, F&B promotions, cost control and profitability.
• Responsible for staff scheduling and payroll cost to ensure adequate coverage according to established practices and maximize on labor potential supervisor and control of the number requested by each department.
• Establishes control procedures for reconciliation of Cashiering before and after service.
3. TECHNICAL RESPONSIBILITIES
• Completes weekly restaurant inspection; checks overall restaurant appearance, the repair of its fixtures, fittings and operating equipment, initiates maintenance request as necessary.
• Participates in the planning of menus & beverage lists.
• Implements and enforces safety regulations and house rules.
4. COMMERCIAL RESPONSIBILITIES
• Attends to guest complaints, requests or inquiries regarding food and services and immediately takes all required corrective measures. Response all the complaints by written in 24 hours.
• Be familiar with changes and trends in the competition and the market place.
• Observes and records employee’s performance, hence able to make recommendations regarding employee’s promotions.
• Train personnel according to established procedures; conducts orientation of all new employees and ongoing training of all staff.
• Establish and conduct training plan for the part times in order to assure the achievement of Melia standard in terms of service deliver and grooming.
• Conducts interview with prospective employees when requested.
• Establishes effective employee relations and maintains the high level of professionalism, ethic and attitude towards all hotel guests, clients, heads of department and employees.
• Encourage and motivate staff to provide optimum service during all shifts.
• Provide on the job training to F&B staff and follow up the implementation and performance of the staff in accordance with SOPs.
• Manage the Food & Beverage cost, maintain the waste food at minimum level in the restaurant.
• Well coordinate with Chef and F&B director to discuss the menu, marketing strategies, guest comments and concerns.

Vị trí tối thiểu đã từng công tác: Restaurant Manager, F&B Manager at the International Restaurant.
Học vấn: Hospitality University, F&B training Certificate
Ngoại ngữ: Good communication in English and other foreign language is an advantage.
